Chili For Vegetarians

Vegetarian Chili is not only good, it's good for you. Add carrot and celery strips as a side dish for contrasting flavor.
Ingredients
- 2 cups textured vegetable protein
- 1 cup chopped white onion
- 1/2 cup chopped green bell pepper
- 2 large tomatoes, chopped
- 1 8 oz can tomato sauce
- 1 15 oz can red kidney beans, undrained
- 1 1.25 oz packet chili seasoning
- 1 cup vegetable juice

Method
In a large saucepan, combine all ingredients, bring almost to a boil, then lower heat and simmer 45 minutes, stirring occasionally. Serve hot.
