Just combine broth, herbs and vegetables and simmer for a great way to warm up on these bitter cold days.
Ingredients:
- 10 cups homemade or canned chicken broth
- 2 chicken boullion cubes
- 1 tablespoon dried parsley flakes
- 1 teaspoon garlic powder
- 1/2 teaspoon ground black pepper
- 1 teaspoon dried marjoram leaves
- 1 10 oz box frozen mixed vegetables
- 1 14.5oz can of petite diced tomatoes
- 3 cups of chopped green cabbage
- 1 6 oz can of tomato paste
- 1 cup of chopped onion
- 1 cup of chopped celery
- 1/2 teaspoon salt
- 2 1/2- 3 cups leftover chicken or chicken from a store bought rotisserie chicken
- 1 tablespoon dried snipped chives
Method
Combine all ingredients in a large pot. Stir and bring to a boil over medium heat. Reduce heat and simmer 1 hour or until all vegetables are tender.
Notes:
Celery and onion can be purchased from the salad bar to save time.
