Chicken Vegetable Soup with Tomato and Herbs


Just combine broth, herbs and vegetables and simmer for a great way to warm up on these bitter cold days.



Ingredients:

  • 10 cups homemade or canned chicken broth
  • 2 chicken boullion cubes
  • 1 tablespoon dried parsley flakes
  • 1 teaspoon garlic powder
  • 1/2 teaspoon ground black pepper
  • 1 teaspoon dried marjoram leaves
  • 1 10 oz box frozen mixed vegetables
  • 1 14.5oz can of petite diced tomatoes
  • 3 cups of chopped green cabbage
  • 1 6 oz can of tomato paste
  • 1 cup of chopped onion
  • 1 cup of chopped celery
  • 1/2 teaspoon salt
  • 2 1/2- 3 cups leftover chicken or chicken from a store bought rotisserie chicken
  • 1 tablespoon dried snipped chives

Method

Combine all ingredients in a large pot. Stir and bring to a boil over medium heat. Reduce heat and simmer 1 hour or until all vegetables are tender.

Notes: Celery and onion can be purchased from the salad bar to save time.
