Chicken Chili

Add as much cayenne pepper to this chicken chili as you like - whether it's fiery or mild it'll still taste great.
 

Ingredients

  • Boneless, skinless chicken breasts
  • 1 1/2 TBS chili powder
  • 1 1/2 tbs of cumin
  • dash cayenne pepper
  • one bay leaf
  • 2 - 14.5 oz cans of no-salt added diced tomatoes
  • 15 oz can of kidney beans
  • 4.5 oz can of minced green chilies
  • 1-cup of whole kernel corn.

Method

1) Cut boneless, skinless chicken breast into bite size cubes. 2) Saute the chicken in olive oil until it is white on the outside (3-4 minutes). 3) Stir in 1 1/2 tbs of chili powder, 1 1/2 tbs of cumin, dash cayenne pepper (its pretty spicy so add as much as you feel comfortable with) and one bay leaf. 4) Saute the chicken and spices for 3-4 minutes, chicken will be nicely coated. 5) Then stir in 2 - 14.5 oz cans of no-salt added diced tomatoes, 15 oz can of kidney beans, 4.5 oz can of minced green chilies, and 1-cup of whole kernel corn. 6) As soon as the canned ingredients have been stirred and heated up (probably a few minutes) then its ready to go.
