Chicken Cauliflower Soup

This chicken soup is loaded with healthy vegetables and rice--and so easy to make.
 

Ingredients

  • 3 qts water
  • 1 whole cauilflower, chopped
  • 10 scallions
  • 6 carrots, sliced
  • 1/2 chicken cut into pieces (with bone, light and dark meat)
  • 4 cups cooked rice (white or brown)
  • 2 Tbsp vinegar
  • 2 chicken flavor bullion cubes
  • 1 cup lemon juice
  • 1/2 cup fresh chopped garlic
  • 4 Tbsp paprika
  • Salt and pepper to taste

Method

Brown chicken, carrots, cauliflower, onion and garlic in large pot with a small amount of oil until chicken is thoughly cooked. Add 3 qts water and remaining ingredients. Bring to a boil. Cover and let simmer until vegetables are tender.

 

Notes: Microwave vegetables to accelerate cooking time.
