Chicken Cauliflower Soup

This chicken soup is loaded with healthy vegetables and rice--and so easy to make.
Ingredients
- 3 qts water
- 1 whole cauilflower, chopped
- 10 scallions
- 6 carrots, sliced
- 1/2 chicken cut into pieces (with bone, light and dark meat)
- 4 cups cooked rice (white or brown)
- 2 Tbsp vinegar
- 2 chicken flavor bullion cubes
- 1 cup lemon juice
- 1/2 cup fresh chopped garlic
- 4 Tbsp paprika
- Salt and pepper to taste

Method
Brown chicken, carrots, cauliflower, onion and garlic in large pot with a small amount of oil until chicken is thoughly cooked. Add 3 qts water and remaining ingredients. Bring to a boil. Cover and let simmer until vegetables are tender.
Notes: Microwave vegetables to accelerate cooking time.
