Chicken and Bean Chilli

Cubes of chicken are combined with kidney beans, peppers & mushrooms in a tomato sauce with brown sugar & mustard, for this chili that's served on rice.
 

Ingredients

  • 3 skinless, boneless chicken breast halves
  • 1 large green bell pepper
  • 1 medium red onion
  • 1 chili pepper
  • 1 6-oz can sliced mushrooms, drained
  • 1 15-oz can kidney beans, drained
  • 4 cloves garlic, crushed
  • 1/2 teaspoon salt
  • 2 tablespoons brown sugar
  • 1 tablespoon prepared yellow mustard
  • 1 tablespoon butter
  • 1 8-oz can tomato sauce
  • 2 tablespoons canola oil
  • 1 cup white rice

Method

Cut chicken into 1/2-inch cubes; brown in oil using a 6-quart pot. Cut bell pepper and onion into 1/2-inch cubes; finely dice the chili pepper. Add all ingredients to browned chicken. Stir, cover, and let simmer on low heat for 30 minutes. While simmering, cook rice in two cups water with a lid on low heat. Serve on a bed of rice.
