This crock pot stew combines chicken, tomatoes, marinated artichokes, bell pepper, mushrooms and red wine, plus shallot and Italian herbs.
Place chicken in bottom of crock pot. Season with salt and pepper. Pour both cans of tomatoes over chicken; add artichokes, mushrooms, and wine. Top with shallot, yellow pepper and Italian seasoning. Stir gently, cover and cook on High about 4 hours (or about 8 hours on Low) or until chicken falls off bone.
Notes:
I put this on in the morning before going to work and come home to the most delicious smell. I serve over egg noodles and with warm crusty sourdough bread.
