Cheryl's Hearty Chicken and Tomato Stew


This crock pot stew combines chicken, tomatoes, marinated artichokes, bell pepper, mushrooms and red wine, plus shallot and Italian herbs.



Ingredients:

  • 2 large whole chicken breasts with bone
  • 8 oz can Contadina sliced tomatoes
  • 8 oz can diced tomatoes with garlic and basil
  • 1 shallot, finely chopped
  • 14.75 oz jar marinated artichoke hearts
  • 1 yellow bell pepper, diced
  • 1/2 cup dry red wine
  • 4.5 oz jar mushrooms or 1/2 cup fresh
  • 1 tsp dried Italian seasoning
  • Salt and pepper to taste
  • 1 pkg egg noodles

Method

Place chicken in bottom of crock pot. Season with salt and pepper. Pour both cans of tomatoes over chicken; add artichokes, mushrooms, and wine. Top with shallot, yellow pepper and Italian seasoning. Stir gently, cover and cook on High about 4 hours (or about 8 hours on Low) or until chicken falls off bone.

Notes: I put this on in the morning before going to work and come home to the most delicious smell. I serve over egg noodles and with warm crusty sourdough bread.
