Vegetables are cooked in chicken broth and thickened with a flour-milk mixture. American cheese is added and melted in the soup.
Melt butter in a saucepan. Add onions, cook and stir until golden. Add celery, carrots, and chicken broth. Cover and simmer until vegetables are tender. Combine flour and 1 cup of milk. Add to soup; cook and stir until smooth and thickened. Add cheese and stir on low heat until melted. Gradually add the remaining milk, stir briskly. Heat through. Garnish with parsley.
