Cape Cod Atlantic Chili with Beans

This adult chili contains fish, imitation seafood, beans, tomatoes, chili powder, curry powder and cumin, plus dark rum and sherry.
 

Ingredients

  • 3 lbs cleaned Atlantic white fish
  • 2 tsp sea salt
  • 1 tsp thyme
  • 3 bay leaves
  • 1 tsp whole black peppercorns
  • 4 tbsp bacon fat
  • 3 large onions, chopped
  • 8 stalks celery, chopped
  • 2 cloves garlic, chopped
  • 2 green peppers, chopped
  • 1, 14 oz can chopped tomatoes
  • 1, 6 oz can tomato paste
  • 3 tbsp Worcestershire sauce
  • 3 1/2 tsp curry powder
  • Juice of one lemon
  • 2, 12 oz cans red kidney beans, drained
  • 12 oz imitation seafood (crabmeat or lobster), chopped
  • 1/4 cup hot sauce (or to taste)
  • 1 3/4 tbsp sugar
  • 1 1/2 tbsp chili powder
  • 3/4 tbsp cumin
  • Salt to taste
  • 1 cup dark rum
  • 1 cup sherry

Method

Place cleaned fish in a large pot and cover with 1 qt water, add salt, thyme, bay leaf and peppercorns. Cook until fish leaves bone, about 15 minutes. In a large frying pan, melt bacon fat; cook onions, celery, garlic and green peppers until softened. Add chopped tomatoes, tomato paste, Worcestershire sauce, curry powder and lemon juice; let simmer for 30 minutes. Remove fish, reserving broth. Strain broth and return broth to pot. Remove fish from bones and return to broth. Add the vegetables from the frying pan and the remaining ingredients to the pot, except for rum and sherry. Salt to taste and simmer gently for 2 hours. Add black rum and sherry for last 10 minutes.

 

Notes: Serve alone or over rice. I recommend having bread available to sop up the liquid. It's great for a large crowd of rowdy cowboys. They'll long for the ocean instead of the prairie.
