Bubbly Pea Soup

A simple pea soup is given a modern twist, with a dash of your favorite bubbly!

Ingredients:

1× 12 oz bag Frozen Green Peas
2 cups Vegetable Broth
1 cup Dry Sparkling Wine
½ cup Creme Fraiche
1 tsp Thyme
Salt & Freshly Ground Black Pepper, to taste

Directions:

Add vegetable broth and frozen peas to a pot, then bring to a boil. Reduce heat to medium and add sparkling wine. Using an immersion blender, or a regular blender in small batches and puree the pea soup. Over low heat and blend in the creme fraiche. Add thyme and season with salt and pepper to taste. Serve immediately.
