Bonnie's Beef Barley Soup

A rich tasting soup made with beef and barley that will satisfy anyone's hunger. Way to go Bonnie!
 

Ingredients

  • 1 gal. water
  • beef base-- according to directions
  • 1 lb. beef- trimmed and cubed
  • 1 med onion- sliced or chopped
  • bay leaf to taste
  • garlic to taste
  • pepper to taste
  • 1/2 lb mushrooms, sliced
  • 1 C celery, sliced
  • 1/2 C barley

Method

Brown the trimmed beef in a small amount of butter or olive oil. Add reconstituted beef base. Add onion, bay leaf, garlic and pepper. Let simmer 2 hours. Add barley, simmer 45 minutes then add celery and mushrooms; cook 1-2 hours until tender.

 

Notes: This recipe is very adaptable and can be "tweaked" to suit most tastes. I was going to put everything in a crockpot for a potluck lunch, but mine was too small. I used a soup pot and it was fine, too. I do recommend the use of a good beef base as canned broth is a little "thin" and the flavor isn't as rich. Taste the final product before salting.
