Beef N Barley Soup

This is a quick and easy soup, which uses up that last bit of roast beef you don't know what to do with.
Ingredients
- 1 good beef bone or leftover roast beef
- 2 stalks celery and leaves
- 2 carrots
- 1 small onion
- 2 potatoes
- 1 bay leaf
- 1 bunch parsley or 2 tsp dry
- 1/2 cup pearl barley
- Salt and pepper to taste
- 3 quarts water

Method
Place beef bone into a pot, or cube leftover roast beef, about a cupful, small dice. Clean and dice vegetables, add chopped celery leaves, parsley and barley. Cover with water and simmer until all vegetables are tender. Check seasonings.
