Beef Minestrone

Ground beef is combined with onions, celery, zucchini, cabbage, pasta, tomatoes, beans, and corn in this version of minestrone.
Ingredients
- 1 lb. ground beef
- 1 medium chopped onion
- 2 T chopped garlic
- 2 1/2 cups water
- 2 T sugar
- 2 stalks celery chopped
- 1 small zucchini, cut in half lengthwise, then thinly sliced
- 1 cup shredded cabbage
- 1 c dried elbow macaroni
- 4 beef bouillon cubes
- 1 tsp. Italian seasoning
- 28 oz whole tomatoes, undrained
- 1 8-oz can red kidney beans, undrained
- 1 cup frozen whole kernel corn

Method
Cook ground beef, onion and garlic in Dutch oven, stirring occasionally until beef is brown; drain. Add remaining ingredients to beef mixture in Dutch oven. While stirring in ingredients, break up tomatoes. Heat till boiling. Cover and simmer for 1 hour, stirring occasionally.
