Beef Minestrone

Ground beef is combined with onions, celery, zucchini, cabbage, pasta, tomatoes, beans, and corn in this version of minestrone.
 

Ingredients

  • 1 lb. ground beef
  • 1 medium chopped onion
  • 2 T chopped garlic
  • 2 1/2 cups water
  • 2 T sugar
  • 2 stalks celery chopped
  • 1 small zucchini, cut in half lengthwise, then thinly sliced
  • 1 cup shredded cabbage
  • 1 c dried elbow macaroni
  • 4 beef bouillon cubes
  • 1 tsp. Italian seasoning
  • 28 oz whole tomatoes, undrained
  • 1 8-oz can red kidney beans, undrained
  • 1 cup frozen whole kernel corn

Method

Cook ground beef, onion and garlic in Dutch oven, stirring occasionally until beef is brown; drain. Add remaining ingredients to beef mixture in Dutch oven. While stirring in ingredients, break up tomatoes. Heat till boiling. Cover and simmer for 1 hour, stirring occasionally.

Number of Servings: 6 serving (1 1/2 cups each)
