Baked Potato Soup

Baked potatoes are scooped out and cut into pieces to stir into this soup that contains a flour-thickened milk mixture with butter, green onion, bacon pieces, cheddar cheese and sour cream.
Ingredients
- 5 large potatoes, baked and cooled
- 2/3 cup butter
- 2/3 cup flour
- 6 cups milk
- 4 green onions, chopped
- 1 jar Hormel Real Bacon Pieces
- 1 cup shredded cheddar cheese
- Salt & pepper to taste
- 8 oz. sour cream

Method
Scoop out pulp from potatoes and cut into bite-size pieces. Melt butter in large, heavy saucepan over low heat. Add flour, stirring until smooth. Cook 1 minute stirring constantly. Add milk; cook over medium heat, stirring constantly until thickened. Add potato pieces, onions, bacon, cheese and salt & pepper to taste. Cook until thoroughly heated, then whisk in sour cream. Add extra milk, if necessary, to desired consistency, and additional cheese, bacon and/or onions to sprinkle on top, if desired.
