Aunt Joan's Baked Stew

Beef stewing meat, cut in cubes, is combined with carrots, potatoes, celery, onion, tomato juice, beef broth and peas. The liquid is thickened with tapioca as it cooks.
 

Ingredients

  • 1 pound cubed beef for stewing
  • 6 carrots, cut up
  • 3-4 potatoes, cut up
  • 1/2 Cup celery, sliced
  • 1 onion, cut up
  • 1 Cup (or more) tomato juice
  • 1 Cup beef broth
  • 1 Cup water
  • 1 Tb. sugar
  • 3 Tb. tapioca
  • 1 t salt
  • 1/2 t pepper
  • Frozen peas, thawed

Method

Place beef cubes, carrots, potatoes, celery and onion in a covered roasting pan or Dutch oven. Combine tomato juice, beef broth, water, sugar, tapioca, salt and pepper; add to beef mixture. Bake, tightly covered, for 3 1/2 hours or more at 325 degrees. Stir in peas to heat through.

 

Notes: Also works well on stovetop over low heat, about 2 1/2 hrs., or in the crockpot for 8 to 10 hrs. on low heat setting or 4 to 5 hrs. on high.
